
Baked Tilapia and Fresh Spinach

Ingredients
- 2 Tilapia filets
- cooking spray
- 4-6 ounces fresh spinach
- 2 Tablespoons chicken broth
- 1/4 of an onion, chopped
- 1 clove of Garlic, chopped
- 5-6 Baby Bella mushrooms, sliced
- 1 Tablespoon Extra Virgin Olive Oil
- Salt and pepper
- Creole Seasoning (recipe below)
- 1 small tomato, chopped
- 2 Tablespoons Feta
- Preheat oven to 350.
- In a skillet, heat olive oil and sautee the onion and garlic until tender. Add mushrooms and cook until tender. Add spinach and cook for about 30 seconds until just slightly wilted. It will continue to wilt in the oven.
- Spray a 9x13-inch baking dish with cooking spray and add the spinach mixture.
- Sprinkle spinach with salt and pepper and onion powder; add the chicken broth. Sprinkle tilapia filets lightly with salt, pepper, and Creole seasonings. Arrange the filets over the spinach and sprinkle with chopped tomato. Cover the baking dish with foil and bake at 350° for 20 to 25 minutes, or until fish flakes easily with a fork. After about 15-20 minutes of baking, add feta.
Creole Seasoning
Recipe yields about 1 Tablespoon.
Ingredients
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon, heaping, Italian Seasoning
- 1/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
- 3/4 teaspoon paprika
- 1/2 teaspoon salt
- In a small bowl, combine onion powder, garlic powder, Italian Seasoning, black pepper, cayenne pepper, paprika and salt. Store in an airtight container.
Roasted Red Potatoes

Ingredients
- 6 red potatoes, washed and cut into 4 quarters
- Extra Virgin Olive Oil, about 1 Tablespoon
- Salt and Pepper to taste
- 1 clove garlic, chopped
- 1/4-1/2 teaspoon onion flakes
- Preheat oven to 425 degrees.
- In a bowl, combine red potatoes, olive oil, salt, pepper, garlic, and onion flakes.
- Spray a square baking pan (or line pan with foil). Add poatoes.
- Bake for about 30 minutes until potatoes are tender.
